Award winning Peruvian chef, cookbook author, restaurateur and arts producer. He appears on TV, hosts YouTube’s Martin’s Peruvian Kitchen and also works in Peruvian music, art, events and charity. Known as an ambassador of Peruvian food and arts. He was born in Peru but left after his father was threatened by the Shining Path guerrillas and has lived in London for over 20 years. He has been cooking since the age of 9, is a self taught chef and in 2012 after 10 years dreaming of having his own restaurant, Martin resigned from a successful career in music, sold his house and put everything into opening Ceviche Soho.

CEVICHE SOHO: THE UK’S 1ST RESTAURANT OF ITS KIND

With a focus on Peru’s Criollo, Nikkei, Chifa and Afro-Peruvian cuisines, Ceviche Soho kick started the Peruvian food revolution as the first Peruvian restaurant of it’s kind in the UK. Bringing together elements of fine dining, casual eating and street food through its small sharing plates and innovative pisco cocktails, Ceviche Soho was influenced by Martin’s childhood in Peru and by the cooking of his great aunts Carmela and Otilia.

UNIQUE NEW RESTAURANTS: ANDINA AND CEVICHE OLD ST

Following that he opened Andina in Shoreditch – a restaurant dedicated to the superfood ingredients from the Peruvian Andes and inspired by his late grandmother Mamita Naty. Recently he opened Ceviche Old St, named ‘Best Venue’ in the UK in the RROTY Awards 2016, introducing Pollo A La Brasa, Amazonian, Modern Nikkei and other aspects of new Peruvian cuisine to London. All 3 restaurants are different in all ways, championing new ingredients and present new dishes and drinks.

CEVICHE: THE COOKBOOK BY MARTIN MORALES

Ceviche: Peruvian Kitchen is the most internationally released Peruvian cookbook. It was released in July 2013 entering the top 10 that year and won The Sunday Times Cookbook of the Year. It’s a best-seller, selling over 160,000 copies and has been translated into 10 languages. In 2015 it won 3 World Gourmand Cookbook Awards and was shortlisted for Best First Book at the UK Guild of Food Writers Award and Best Book Design at the Global Association for Creative Advertising and Design Awards.

Ceviche Old St Gallery is housed within the restaurant and is the first ever Peruvian contemporary art gallery outside of Peru. It features Peru’s top contemporary artists and is launching on October 1st 2015. Martin also runs Tiger’s Milk Records – a company dedicated to Peruvian music and PK Peruvian Kitchen natural food products. He produces innovative Peruvian food and arts events around the UK and other countries, is a regular guest at food and music festivals and central to all he does is his work as a Trustee for the Brit-Peruvian charity Amantani

STEVE JOBS, MILEY CYRUS & LEE SCRATCH PERRY

Previously he worked in music, media and tech industries. Working with Steve Jobs at Apple he was one of the founder members and Head of iTunes Pan Europe. He was a Board Director at Disney and launched the careers in Europe of Miley Cyrus, Jonas Brothers, Demi Lovato and Selena Gomez. He has produced over 100 music compilations by artists including John Coltrane, Lee Scratch Perry, Kirsty Macoll, Asha Bhosle and Tito Puente. He launched KT Tunstall and worked with Joss Stone, The White Stripes, and Buena Vista Social Club. He was a DJ for 15 years and played in more than 35 cities including Rio, Moscow, Tokyo, NY & Marrakesh as well as at many major music festivals.

1995: THE GLOBAL KITCHEN

At Leeds University in the mid 90s he started a night called the Global Kitchen which featured DJ Chef (him). There he would cook and DJ at the same time. In his teenage years he worked as a kitchen porter, cleaner, junior chef, silver service waiter, barman and bar manager. He has also lived in Barcelona and Mexico City – studied in the former and was kidnapped at gunpoint in the latter.

 

All the above life, creative and management experience has made Martin a leading light in Peruvian food and culture, leadership, entrepreneurship, and mentoring.
