THE HERE AND NOW

I have worked with Steve Jobs at Apple as one of the founder members and Head of iTunes Pan Europe. I was a Board Director at Disney and launched the careers in Europe of Miley Cyrus, Jonas Brothers, Demi Lovato and Selena Gomez. I was also a DJ for 15 years and played in more than 35 cities including Rio, Moscow, Tokyo, New York and Marrakesh as well as at many major music festivals.

 

At Leeds University in the mid 90s I started a night called the Global Kitchen which featured DJ Chef (me). There I would cook and DJ at the same time. 

 

All the above life, creative and management experience has made me a leading light in Peruvian food and culture, leadership, entrepreneurship, and mentoring. I’m now the founder of Ceviche and Andina. These restaurants are run by a world class team of people who, like me, are passionate about Peruvian food and culture. 

BEGINNINGS

I have been cooking since the age of 9, I am a self taught chef and in 2012 after 10 years dreaming of having my own restaurant, I said ‘enough is enough’, resigned from a successful career in music, sold my house and put everything into opening Ceviche Soho in London. I heard my calling to go back to cooking, craftsmanship and creativity and to follow my love for Peruvian food.

 

Ceviche Soho kick started the Peruvian food revolution. Following that he opened Andina in Shoreditch – a restaurant dedicated to the superfood ingredients from the Peruvian Andes. Recently he opened Ceviche Old St. All 3 restaurants are different in all ways, seek to pioneer new ingredients and present new dishes and drinks and are truly independent. 

 

MUSIC, ART AND MUCH MORE

I have produced over 100 music compilations by artists including John Coltrane, Lee Scratch Perry, Kirsty Macoll, Asha Bhosle and Tito Puente. I also launched KT Tunstall and worked with Joss Stone, The White Stripes, and Buena Vista Social Club. 

 

All that was fun,  but the urge to work with my own culture and roots is my calling. That's why I started Tiger’s Milk Records, a company dedicated to Peruvian music, Ceviche Old St Gallery, London’s gallery for Peru’s top contemporary artists, and PK Peruvian Kitchen natural food products. 

 

I am dedicated to raising the awareness and have appeared on various TV shows cooking and talking about Peruvian food and culture, host YouTube’s Ceviche TV and also work in Peruvian events and charity. 

STUFF HAPPENS

I was born in Peru but left after my father was threatened by the Shining Path guerrillas and have lived in London for over 20 years.  I’ve been kidnapped in Mexico and studied in Barcelona. I've got kids but also lost kids. I’ve been told I’m tenacious, relentless, and never give up when trying to achieve and deliver. I never stop questioning, think laterally and always want work and people to be fair. I want to leave a healthy legacy. I like change, its in my nature. I am curious and always want to learn more; I relish a challenge and believe life is boring without it. Because I’ve failed enough times I’m not prepared to fail again. I want to work with people that inspire me and that I enjoy spending time with; with people that truly care about what we are doing.
