ANDINA: THE HEART OF PERUVIAN FOOD

Peruvian food is a vast culinary landscape mixing Indigenous Inca and pre-Inca cuisine, with food influenced by migrants from Africa, Japan, China, Spain and Italy. But the roots of it lie in the Andes today. For the first time, our new cookbook ANDINA will tell that story, with authentic and creative recipes that we have served in our restaurants and those that I have researched and discovered on my travels deep into the Andes.

POLLO DE MI TIA CARMELA

I am back on Food Tube, showing you how to create a Peruvian classic at home. This chicken stew recipe is very close to my heart and has been passed down by my great-aunt Carmela. It's an ideal recipe for Sunday lunch, and can be made with everyday ingredients. Onions, tomatoes, carrots and cumin create a delicious base for the meat to cook it. I am using a whole chicken so there is no waste and maximum flavour. You can serve this with freshly boiled rice or even spaghetti if you fancy it. INTRODUCING CASITA ANDINA

Casita Andina is to open in Soho on 28thJuly, Peruvian Independence Day. Located at 31 Great Windmill Street, Casita Andina is inspired by Peruvian ‘picanterias’, family-run, traditional restaurants which serve the local community and travellers. 

 

In the last 2 years my team and I have travelled to Peru several times to deeply research regional Andean dishes, drinks and ingredients as well as history, art and traditions. From this we have created new dishes and drinks based on local traditions some of which date back hundreds of years. And at Casita Andina I also want to celebrate the textile legacy of the Andes of Peru. So through our dishes, art and design this will be a key colourful theme running through it.

HOW TO MAKE CASSAVA CHIPS

My friend John Quilter aka The Food Busker joined me at 'On Blackhealth' to cook up some crispy cassava chips with a cheesy huancaina sauce.

 

They are an amazing alternative to the classic chip and are deliciously moreish. Enjoy them with my homemade cheesy chilli sauce. This really is a must try! Check out this recipe here.

PERUVIAN STYLE PORK BELLY

Our lovely recipe on Jamie Oliver's Food Tube is Peruvian soul food at its best! We cooked pork belly roasted and tossed in a sweet, syrupy blackcurrant sauce and served on a bed of creamed corn mash. Delicious confort food for special ocassions, perect to eat with your family or to make at the weekend. We are always looking for new ways to embrace technology at Ceviche Old St, Ceviche Soho and Andina so we were thrilled to collaborate with Digital Shoreditch festival at Ceviche Old St recently. HOW TO LAUNCH A NEW CULTURE: PERUVIAN FOOD AND ART

I was delighted to be asked to give a talk about Peru at a TEDx event organized by a local community at City University London. I shared with the audience my personal experiences of how I overcame cultural barriers and followed my passion of cooking. 

 
ANDINA AND AMANTANI PRESENT MEET MY WORLD

Andina and Amantani’s Meet My World edible film nights were a huge success. We sold out 3 weeks in advance and served small, beautiful bites lovingly packaged in our Andina Lunch Boxes to over 600 people. Each bite accompanied a Meet My World Film produced by the brilliant Peruvian director Cristina Patiño Sheen and written by a different child in Amantani’s care. THE CEVICHE LUNCH WITH ROB DA BANK

It's a Pisco Disco in The Music Room at Andina! I met up with my good friend Rob da Bank for The Ceviche Lunch to talk all about Camp Bestival and my role as an Ambassador with the Feast Collective.
